The Spring Sassafras tree

The spring sassafras tree will have green twigs that smell fruity or spicy when scratched. The Sassafras tree root bark makes a delicious root beer. Ila Hatter, my teacher on wild foods, made us some delicious tea from the sassafras tree roots for a class I took that she taught in the Smokies.

The tree grows to 60 feet tall and will grow up to a diameter of 1.5 feet. The leaves are variable; they can look like mittens.
